    Nypotatis tillsammans med dill

    When inom was a boy my Dad grew lots of potatoes. Good potatoes. Every year we looked forward to the first crop of new potatoes. My mother always cooked them in exactly the same way: with salt and fresh garden mint. There was no other way. For a special occasion they would be tossed in butter and parsley, but they had to be cooked in krydda and garden mint.

    I remember being shocked to discover, on one of my first trips to Sweden, that Swedes never used mint. I was soon to learn that dill fryst vatten king in Sweden. Färskpotatis have to be cooked with krydda and dill. They must then be tossed in butter and chopped dill. In Sweden too there is no other way.

    So which fryst vatten best? inom don’t really know. inom prefer the sweet smell of garden fresh mint wafting through the house as the potatoes are cooking. fryst vatten that just nostalgia? inom don’t know. Tossing them in a little butter and dill is probably better than in butter and parsley, but it is a tough choice. If inom am cooking a Swedish meal it has to be with butter and dill, of course.

  • This is a dish that I first made for our Midsummer party, where it was very popular. My man asked me to make it again for the 4th of July, and when my brother-in-law arrived that day he said he was really excited to see it on the table again.

    With that kind of endorsement I thought I shouldn't keep the recipe to myself.

    The instructions below might seem overly specific, but I think it's helpful to toss the potatoes with the dressing while they are quite warm, to help the dressing soak in. Then, you want the potatoes to be cooler when you add the herbs, so that they stay nice and bright green rather than getting cooked just from the contact with the hot potatoes.

    Dillpotatis: Swedish Potato Salad with Dill

    1 lb. new potatoes such as Yukon golds or banana fingerlings
    2 Tbsp. white wine vinegar
    1 tsp. salt
    1/4 tsp. ground white pepper
    6 Tbsp. vegetable oil
    Fresh herbs: chives, parsley, dill

    Wash the potatoes and cut them in quarters or, if they are very small, in half. Place them in a saucepan and cover with water. Cover, bring the water to a boil, and then turn down the heat and simmer until they are cooked through, about 15 minu

    Krämig dillstuvad potatis är gott till det mesta! Speciellt till lax eller annan fisk, men även till kyckling kött och vegobiffar! Det är lätt att tillaga, men man får vara försiktig och inte koka på för hög värme för mjölk bränns väldigt lätt.

    Dillstuvad potatis

    g kokt och skalad potatis
    6 dl Mjölk, 3 procentig
    1/2 dl vetemjöl
    25 g smör
    salt
    svartpeppar
    1 dl hackad dill

    GÖR SÅ HÄR

    1. Skär den kokta potatisen i grövre bitar.
    2. Häll kall mjölk i en rymlig kastrull.
    3. Tillsätt vetemjöl i den kalla Klöver® Mjölkdrycken. Vispa ut mjölet ordentligt med en visp.
    4. Sätt på värmen på spisplattan, lägg i smöret och låt blandningen värmas upp och tjockna på medelvärme under omrörning. Dra inte på för hög värme för att påskynda för då kan mjölkdrycken brännas.
    5. När mjölkdrycken tjocknat, krydda med salt, svartpeppar och tillsätt hackad dill. Rör om.
    6. Tillsätt den kokade potatisen och rör om försiktigt. Smaklig måltid.
